TECHNICAL NOTES

Grapes were handpicked and transported in small trays to preserve fruit integrity. Fermentation took place for 8 days at temperatures between 28ºC to 29ºC, with post-fermentation maceration of 6 days according to tasting. 55% of this wine was kept for 9 months in French and American oak barrels, while the rest of it in stainless steel to preserve fruit aromas. This wine is neither treated, nor filtered in order to preserve natural aromas and body. It is bottles and cellared for 5 months before released.

TASTING NOTES

Deep and intense red-violet color. This Merlot is generous in berry aromas and spices, with a soft touch of oak. A lingering wine of great structure, with ripe tannins. Good to cellar from 3 to 6 years.

Serve at 18ºC. Recommended for pasta with savory sauces, or well spiced recipes.
